Ingredients For Stuffing
- 2 bowls boiled white chickpeas
- 5 medium-sized boiled and mashed potatoes
- 2 finely chopped onions
- 2 finely chopped tomatoes
- 2 finely chopped green chillies
- 1 handful finely chopped fresh coriander
- 3–4 tsp tamarind water
- 2 tsp red chilli powder
- 1 tsp garam masalaSalt to taste
- 1 tsp lemon juice
To Serve
- Mint chutney
- Sweet tamarind chutney
- Curd (optional)
Prepare Stuffing
- Boil two bowls of white chickpeas in a pressure cooker until soft. Transfer them to a large mixing bowl.
- Add five medium-sized boiled and mashed potatoes. Mix well to form a smooth blend.
- Now add chopped onions, tomatoes, green chillies, and coriander.
- Pour in tamarind water, sprinkle red chilli powder, garam masala, salt, and lemon juice. Mix everything thoroughly so the flavours combine evenly.
Prepare Kulcha
- Take bun-style Kulchas and gently slit them from the middle, creating a pocket.
- Carefully fill each Kulcha with the prepared stuffing, making sure not to tear the bun.
- Heat a pan and melt a little butter.
- Place the stuffed Kulchas on the pan and toast them on both sides until golden brown and crisp. The buttery aroma and crunch make them even more irresistible.
