Ingredients
- 500 grams karela
- 250 ml mustard oil
- Salt to taste
- 2 tablespoons fennel seeds
- 1 tablespoon fenugreek seeds
- 2 tablespoons ground mustard
- 1 teaspoon turmeric powder
- 1 tablespoon red chilli powder
- 2 teaspoons dry mango (amchur) powder
- A pinch of asafoetida (hing)
- 2 tablespoons vinegar (optional)
Recipe
Step 1: Prep The Karela
Wash the karelas thoroughly and slice them into thin pieces. Mix them with a little salt and leave them for 2 hours. This helps reduce bitterness. After 2 hours, squeeze out the water and spread the pieces on a clean cloth to dry completely.
Step 2: Prepare The Masala
Lightly roast fennel and fenugreek seeds and grind them coarsely. In a bowl, mix ground mustard, turmeric, chilli powder, dry mango powder, roasted fennel-fenugreek mix, and salt.
Step 3: Combine
Heat mustard oil in a pan and add asafoetida. Let the oil cool slightly before mixing it with the prepared spices. Add the dried bitter gourd pieces and mix well. Add vinegar if you want to enhance shelf life.
Step 4: Store the Pickle
Transfer the pickle into a clean, dry glass jar and place it in sunlight for 2–3 days.
Tips For Longevity
- Ensure all ingredients are completely dry.
- Always use a clean, dry spoon to take out the pickle.
- Store in a cool, dry place. The pickle stays good for up to 6 months.
